  • 250 g couscous
  • 1 courgette, diced
  • 1 red onion, cut into wedges
  • 250 g cherry tomatoes
  • 2 tsp ground cumin
  • 1 tsp garlic granules
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • 150 g Greek yogurt
